cauliflower cheese

“...a traditional British dish. It can be eaten as a main course, for lunch or dinner, or as a side dish. Cauliflower cheese consists of pieces of cauliflower lightly boiled and covered with a milk-based cheese sauce, for which a mature cheese (such as cheddar) tends to be preferred. A more elaborate white sauce or cheddar cheese sauce flavoured with English mustard and nutmeg may also be used. The dish is topped with grated cheese (sometimes mixed with bread crumbs) and baked in the oven to finish it.”

after six attempts, our 6 quart instant pot recipe is as follows:

ingredients

½ c water, broth, dashi, et al garlic, minced, optional (can use dried powder) onion, diced, optional (can use dried powder) 1 cauliflower head, cut into florets, leaves & stem julienned try leaving whole next time ~6 oz cheese, diced small/grated/shredded trying all hard cheeses 1st, then moving to soft 1 T oil 1/4 c/4 T whole milk, half & half, cream, buttermilk, et al 1 T thickener in cold water before mixing into extra parmesan, pecorino, et al

instructions

pour ½ c liquid into the bottom of the instant pot add aromatics if using add cauliflower pressure cook 1 min, with immediate release break apart the cauliflower into smaller pieces for easier mixing mix in cheese, oil, dairy & thickener taste, adjust broil, optional

cauliflower is usually sold by the head, so buy the heaviest/largest can buy extra as cauliflower lasts a long time so far target is not the cheapest
